Salmon Salad   

4 servings

 

  • 1 15½ oz. can pink salmon
  • 1/3 cup finely chopped scallions
  • 1/3 cup (1 stalk) chopped celery
  • 1 tablespoon lemon juice
  • 1/4 cup light or nonfat mayonnaise
  • 8 slices whole wheat or rye bread

Mix all ingredients (except bread) and chill. When needed, spread between 2 slices of bread. May also add some lettuce and/or a slice of tomato.

Also great as a filling in hard-boiled egg whites halves (for a snack).
