Sweet Potato Salad

6 servings

 

  • 2 1/2 pounds (medium sized) sweet potatoes
       peeled and cut into 1-inch chunks
  • 3/4 cup light mayonnaise
  • 1/4 cup honey
  • 1 tablespoon yellow mustard
  • 1/2 (or more) cup chopped walnuts
  • 1/4 teaspoon salt

Put the sweet potato chunks into a large pot and add enough water to cover. Bring to a boil over hight heat and let boil for about 12-15 minutes, or until fork tender; drain.

In a large bowl, combine the remaining ingredients; mix well. Add the cooled sweet potato chunks and mix well. Chill for at least 2 hours before serving.
