Tuna Salad

2 servings

  • 1 10 oz.* can canned solid white tuna
       in water, drained
  • 2 Tablespoons sweet pickle relish
  • 3 Tablespoons lowfat mayonnaise
  • 1 teaspoon lemon juice
  • 1/4 cup (1 stalk) chopped celery
  • 1/4 cup chopped onions or scallions
  • 4 slices Health nut whole wheat bread
       or 2 halved Pita Breads

Mix all ingredients (except bread) and chill. When needed, spread between 2 slices of bread. May also add some lettuce and/or a slice of tomato.

* Note: In this age of 'resizing' use a 7oz and a 3oz can. If only 12oz can is available, slightly increase the measured amounts of other ingredients.

Also great as a filling in hard-boiled egg whites halves (for a snack).
