Marinated Cucumbers 

4 to 6 servings

This simple condiment from Thailand provides a cooling counterpart to a spicy entree such as Singapore Satay.

  • 1/3 cup white vinegar
  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 large cucumber
  • 1/4 cup roasted peanuts, chopped
  •    some sliced bermuda onion

In a small pan, combine vinegar, water, sugar and salt. Cook over medium heat, stirring, until liquid boils and sugar is dissolved; remove from heat and let cool to room temperature.

Peel cucumber; cut lengthwise, scoop out and discard seeds, slice cucumber into 1/8-inch slices. Place in serving bowls, pour marinade over cucumbers; stir to blend. If made ahead, cover and refrigerate for UP TO 2 HOURS (does not keep well after that).

Top with Peanuts or slices of bermuda onion if desired.
