Acorn Squash a l'Orange

2 servings

 

  • 1 acorn squash
  • 1 tablespoon margarine or butter
  • 1 teaspoon orange peel, freshly grated
  • 1 orange, peeled, sectioned and seeded

Cut acorn squash in half; scoop out and discard seeds. Fill each center with 1/2 TBS margarine, 1/2 tsp grated orange peel and 4 to 5 orange sections.

Put squash into baking dish; loosely covered with plastic wrap. Microwave for 8 to 10 minutes
