Banana Nut Bread

12 slices (or 24 small slices)

We use applesauce instead of oil to lower fats and Splenda to lower sugar.

  • 1 2/3 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/3 cup natural applesauce
  • 3/4 cup Spenda brown sugar blend
  • 3 egg whites
  • 3 medium bananas, mashed
  • 1/3 cup water
  • 1/2 cup walnut pieces

Preheat oven to 350°. In 1 bowl stir together the flour, baking soda and baking powder; set aside.

In a larger bowl mix the applesauce and brown sugar. Stir in the egg whites, mashed bananas and water. Now stir in the dry ingredients.

Pour the mixture into a loaf pan that has been sprayed with nonfat, nonstick cooking spray and press the walnuts into the top of the mixture. Bake for 55 to 60 minutes or until a knife comes out clean. Cut and serve.
