Orange Glazed Turkey Tenders

4 servings

 

  • 2 teaspoons olive oil
  • 1 pounds turkey tenders
  •    salt & pepper to taste
  • 1/3 cup orange marmalade
  • 2 tablespoons red wine vinegar
  • 1 tablespoon peeled & grated fresh ginger
  • 1 small orange cut into wedges (optional garnish)
  • 1 teaspoon parsley (optional garnish)

Heat oil in a non-stick skillet on medium. Place turkey tenders in skillet, sprinkle with salt & pepper, and cook until slightly browned on the outside and have lost the pink color on the inside (about 4 minutes on each side).

While tenders are cooking, mix marmalade, vinegar and ginger in a small bowl. Add this mixture to the skillet containing the tenders and heat to a boil. Serve tenders with garnish if wished.
